Pumpkin Banana Walnut Protein Muffins

Oh yeah baby!!! It’s officially fall! 🍁


This is my favorite season of the year - so of course I couldn’t resist a little pumpkin action 🎃


These easy, delicious muffins pack in nearly 10 grams of protein EACH! 😱


Pair one of these with a yummy egg bite and you have the perfect breakfast on the go! 💥


Pumpkin Banana Walnut Protein Muffins


2 Mashed overly ripe bananas

1/2 c. Pumpkin puree

2 Eggs

1/2 Tbsp Vanilla extract

1/4 c. Maple syrup

1 tsp Baking soda

1/4 tsp Salt

1 tsp Cinnamon

1/2 tsp Nutmeg

1/4 tsp Ground ginger

3 Tbsp applesauce, unsweetened

1 1/2 c Whole wheat flour

150 g Pumpkin spice protein powder (see below)

1/2 c Plant based milk

1 tsp Turmeric (trust me - you won’t even taste it)


Topping:

1 Tbsp Butter

1/4 c Walnuts, chopped

2 Tbsp Whole wheat flour

2 Tbsp Coconut sugar


🚨*LINE AND SPRAY MUFFIN TIN*🚨

(I found out the hard way so you don’t have to 🤣)


✳️ Mix butter, walnuts, coconut sugar and 2 Tbsp of flour in a bowl until looks like wet sand. Set aside.

✳️ Mix dry ingredients in a bowl. Mix wet ingredients in separate bowl with mashed bananas. Slowly incorporate dry ingredients into wet ingredients.


✳️ Fill each tin evenly. Top with walnut/sugar mix.


✳️ Bake at 350 degrees for 18-23 minutes.
